- Description
- The 2007 vintage is immediately fruity, with a bright, even explosive nose of summer fruits, wild strawberry a hint of blackberry, with notes of wild herbs and rosemary. On the palate the wine is full-bodied, and the sweetness of oak and a trace of vanilla support a compote of summer fruit flavours. The wine has considerable length and power, and there are notes of mineral and chocolate, and even tar on the finish. A couple of years in bottle has softened and rounded this very nicely.

- Fermentations in a mixture of upended demi-muids (500 L barrels) with the ends taken out, and a stainless steel tank for the majority of the Carignan. Pressing with a small basket press. Maturation in a mixture of new, 1 year old and 2 year old barriques and Demi-muids for 14 months.
- Growing Conditions
- In 2007, we hadn’t had much rain all winter, and the yield was almost the lowest ever known in the South of France. Great for quality, but not so good for the bank manager. This is undoubtedly one of the best years from the Roussillon this decade.

"Finally it was the turn of their first official vintage the 2007 and man it did not disappoint. That black schist was back on the nose, smoky, ripe and inviting. Juicy blueberry leapt around my mouth getting into every pore, exciting my taste buds with it’s concentrated yet fresh dark fruit. A beauty of a wine and shows just how well this wine can age yet retain such vibrancy."

“Lush, brooding, sweet dark cherry and plum nose with a stewed plum character. Ripe and slightly baked. Nice savoury twist to the sweet fruit. The palate is lush and broad with liqueur-like richness to the plum and blackberry fruit. There are spicy, leathery, savoury notes, with dry tannic structure. Warm and broad." - 89
